Fluffy Buttermilk Biscuits
Servings: 6
Ingredients:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp baking soda
- 1 tsp sea salt
- 6 tbsp cold unsalted butter, cut into small cubes
- ¾ cup cold buttermilk (plus 1–2 tbsp if needed)
Instructions:
- Preheat oven to 425°F Line a baking sheet with parchment paper.
- In a large bowl, whisk together dry ingredients first: flour, baking powder, baking soda, and salt.
- Cut in the butter using a pastry cutter or your fingertips. If using hands, continue to work in the butter until it resembles course crumbs.
- Pour in the buttermilk and stir gently until dough just comes together. May be “shaggy”
- Turn dough onto a lightly floured surface, pat into a ¾-inch thick rectangle, fold it over once, then pat again. Repeat once more for flaky layers. May need extra flour to keep from sticking to hands and countertop.
- Cut out 6 biscuits with a 2½-inch cutter or the top of a mason jar, place on baking sheet touching slightly.
- Bake 12–15 minutes, until golden on top. Brush with melted butter if desired.
Sausage Milk Gravy
Ingredients:
- 1 lb breakfast sausage
- 3 tbsp all-purpose flour
- 2½ cups whole milk
- ½ tsp salt (or to taste)
- ½ tsp black pepper (freshly ground)
- Optional: pinch of cayenne or red pepper flakes for heat
Instructions:
- In a large skillet, cook sausage over medium heat, breaking it apart with a spatula until browned and cooked through (about 8 minutes). Pour off excess fat.
- Sprinkle flour over sausage and stir to coat evenly. Cook 1–2 minutes.
- Gradually pour in milk, whisking constantly to prevent lumps.
- Simmer 5–7 minutes until thickened. Season with salt and pepper to taste.
- Spoon over warm biscuits and serve immediately.

- ¾ cup unsweetened oat milk (or almond milk) + 1 tsp apple cider vinegar
Dairy-Free Sausage Gravy
Ingredients:
- 1 lb gluten-free breakfast sausage
- 3 tbsp gluten-free flour (or brown rice flour)
- 2½ cups unsweetened almond milk (or oat milk)
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp smoked paprika
- Optional: cayenne
