Classic Southern Biscuits & Sausage Milk Gravy

Fluffy Buttermilk Biscuits

Servings: 6

Ingredients:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • 1 tsp sea salt
  • 6 tbsp cold unsalted butter, cut into small cubes
  • ¾ cup cold buttermilk (plus 1–2 tbsp if needed)

Instructions:

  1. Preheat oven to 425°F Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together dry ingredients first: flour, baking powder, baking soda, and salt.
  3. Cut in the butter using a pastry cutter or your fingertips. If using hands, continue to work in the butter until it resembles course crumbs.
  4. Pour in the buttermilk and stir gently until dough just comes together. May be “shaggy”
  5. Turn dough onto a lightly floured surface, pat into a ¾-inch thick rectangle, fold it over once, then pat again. Repeat once more for flaky layers. May need extra flour to keep from sticking to hands and countertop.
  6. Cut out 6 biscuits with a 2½-inch cutter or the top of a mason jar, place on baking sheet touching slightly.
  7. Bake 12–15 minutes, until golden on top. Brush with melted butter if desired.

Sausage Milk Gravy

Ingredients:

  • 1 lb breakfast sausage
  • 3 tbsp all-purpose flour
  • 2½ cups whole milk
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper (freshly ground)
  • Optional: pinch of cayenne or red pepper flakes for heat

Instructions:

  1. In a large skillet, cook sausage over medium heat, breaking it apart with a spatula until browned and cooked through (about 8 minutes). Pour off excess fat.
  2. Sprinkle flour over sausage and stir to coat evenly. Cook 1–2 minutes.
  3. Gradually pour in milk, whisking constantly to prevent lumps.
  4. Simmer 5–7 minutes until thickened. Season with salt and pepper to taste.
  5. Spoon over warm biscuits and serve immediately.

Gluten-Free Dairy-Free Biscuits

Servings: 6

Ingredients:

  • 2 cups gluten-free all-purpose flour (with xanthan gum included)
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 6 tbsp cold vegan butter (Miyoko’s or Earth Balance)
  • ¾ cup unsweetened oat milk (or almond milk) + 1 tsp apple cider vinegar

Dairy-Free Sausage Gravy

Ingredients:

  • 1 lb gluten-free breakfast sausage
  • 3 tbsp gluten-free flour (or brown rice flour)
  • 2½ cups unsweetened almond milk (or oat milk)
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp smoked paprika
  • Optional: cayenne
